Edamame & Pan Roasted Corn

This is a great family recipe with a puree recipe for babies in stages
two and three.
Ingredients:
3 ears fresh sweet corn or 1-1/2 cups of frozen corn
1-1/2 cups shelled edamame
2 Tbsp olive oil
2 Tbsp water
1 Tbsp chopped cilantro
1 Tbsp lime juice
1 Tbsp butter
Salt & pepper, to taste
Directions: For fresh corn, remove husks
from corn and cut kernels off the cobs. In a large sauté pan, heat olive
oil over medium-high heat. Add corn kernels to the pan. Sauté
until the kernels begin to get a brown crust, about 3-4 minutes. Reduce
heat to medium and add shelled edamame and water, saute for 3 minutes
until the water is absorbed. Remove from heat, set aside a portion to
puree for your baby. (see below) To the remaining mixture in the pan
(for the rest of the family), stir in cilantro, lime juice, and butter.
Add salt & pepper to taste. Serve immediately and can be frozen
into small portions for future meals.
For Baby: Puree mixture in a blender. Add
water to develop a smooth texture. The puree mixture does not include
cilantro, lime juice, butter, salt or pepper.
**Stage 2: mixed food purees (2 or 3 food purees mixed together);
Stage 3: A combo of pureed foods and textured foods such a mashed
rice, pastina, meats (ground or shredded, etc...).
