5 Quick BBQ Recipes

Quick BBQ Recipe #1: Thai Spiced BBQ Chicken
Serves 6
1 ¼ lb chicken tenderloin pieces
1 tbsp fresh lemon grass, chopped
2 tbsp fresh lime juice
2 scallions, chopped
2 cloves garlic, finely minced
1 tbsp freshly grated ginger
2 tsp Thai sweet chilli sauce

In a bowl, combine the lemon grass, lime juice, scallions, garlic, ginger and sweet chilli sauce.

Place chicken pieces in a shallow dish (Pyrex or glass) and pour over the marinade. Cover with wrap and refrigerate for at least 2 hours.

Heat up the BBQ. Drain and reserve the marinade. Grill the chicken pieces on a hot BBQ on each side until golden brown. Continue brushing the chicken with the reserved marinade.

Cooking time should be about 3 minutes for each side.

Quick BBQ Recipe #2: BBQ Sweet and Sour Chicken
2 boneless and skinless chicken breasts, cut in half
4 tbsp olive oil
2 tbsp balsamic vinegar
Juice of ½ lime
Juice of ½ lemon
1/3 cup light brown sugar
2 tbsp Dijon mustard
1/3 cup honey
2 garlic cloves, crushed
1 tsp salt
½ tsp black pepper
Chopped Parsley to garnish

In a large shallow bowl, add garlic, lemon and lime juices, sugar, mustard, honey, salt, pepper and vinegar and whisk thoroughly. Add the olive oil and whisk again.

Set two portions of the marinade aside for later. Add the chicken halves to the bowl and coat each side with the marinade.

Heat up the BBQ and grill the chicken pieces for about 4 minutes each side or until no longer pink inside. Baste the chicken pieces with one portion of the reserved marinade occasionally.

Sprinkle with the chopped parsley and serve with the last portion of the marinade as dipping sauce. (This is a family favorite.)

Quick BBQ Recipe #3: BBQ Thai Meatball Skewers
(Serves 4)

11 oz beef mince
3 shallots, finely chopped
3 cloves garlic, chopped
1 inch piece fresh ginger, grated
1 tbsp green peppercorns, crushed
2 tsp fish sauce
2 tsp brown sugar
Lime wedges
Wooden skewers

Soak the wooden skewers in water to prevent them burning.

Chop the beef mince with a large knife to make sure the mince is very fine. Add the ginger, garlic, shallots, peppercorns, fish sauce and brown sugar and combine with your hands. Form the mixture into balls using about 2 tsp of mixture at a time. Put three balls on each skewer.

Heat up your BBQ grill and oil lightly. Cook the meat for about 7 to 8 minutes or until the meat is cooked through.

Serve with the lime wedges.

Quick BBQ Recipe #4: Very Easy BBQ Chicken Sandwich

1 1/2 cup lite mayonnaise
1/4 c white wine vinegar
1 tablespoon pepper
1 teaspoon Creole mustard
2 garlic cloves, minced
2 teaspoons horseradish
1/4 cup water
3 cups shredded cooked chicken
5 slices low fat wheat bread, toasted
Tomato slices
Pickle slices

Place the mayonnaise, vinegar, pepper, mustard, garlic and horseradish into a large mixing bowl. Slowly add the water and mix gently until completely combined. Gently fold in the chicken. Top each slice of toasted bread with a piece of lettuce, tomato slice and a pickle slice. Add the BBQ Chicken to the top.

Quick BBQ Recipe #5: BBQ Beef Strips
16 oz. lean round steak, cut into strips
1 (15 oz.) can chunky tomato sauce
1 Tbsp. Worcestershire sauce
2 Tbsp. brown sugar
1 Tbsp. prepared mustard
1/3 C. water
1/8 tsp. black pepper
1 C. onion slices

In a large skillet, brown meat. In a medium bowl, combine tomato sauce, Worcestershire sauce, brown sugar, mustard, water, and black pepper. Pour sauce mixture over meat in skillet. Layer onion slices over the top. Cover and lower heat. Simmer 15 minutes, stirring occasionally. Good served over rice or pasta.

And here’s a great BBQ recipe, if you have a little more time;

And one delicious BBQ dessert:
BBQ Bananas with Nuts
(serves 6)

6 under ripe bananas
Generous amount of whipped cream to serve
1 tbsp unskinned almonds
1 tbsp unskinned hazelnuts
¼ cup granulated sugar

In a small frying pan, place almonds, hazelnuts and sugar. Heat gently, constantly stirring, until the sugar has dissolved. Increase the heat and cook until the mixture resembles a toffee-like syrup.

Pour this mixture onto a non-stick baking sheet and place the sheet on a metal baking sheet on a wooden board. Set aside to cool off. It will become brittle when cold. Crush finely.

Cut a slit lengthways into the skin of each unpeeled bananas. Open out the banana skin slightly and using 3 tsp of the nut mixture per banana, fill the slit of each banana.

Reshape the bananas and wrap each one in aluminium foil. Make sure the top is sealed.

Reheat the BBQ and put the wrapped bananas onto the grill for about 8 – 10 minutes, turning them over halfway.
